KAJIAN TENTANG PENGELOLAAN MAKANAN UNTUK SANTRI di PESANTREN PROGRESIF BUMI SHALAWAT SIDOARJO

Pesantren Progresif Bumi Shalawat, serta untuk mengetahui terpenuhinya kecukupan gizi santri (energi, karbohidrat, protein dan lemak). Fungsi pengelolaan yang dilihat dalam penelitian ini diantaranya perencanaan, pengorganisasian, penggerakkan dan pengawasan, sedangkan untuk unsur yang dilihat diantaranya man, money, material, mechine, method dan market.Penelitian dilaksanakan di Pesantren Progresif Bumi Shalawat Sidoarjo dengan responden santri kelas VIII berjumlah 42 anak. Jenis penelitian deskriptif kualitatif. Metode yang digunakan diantaranya wawancara, observasi, kuesioner dan dokumentasi. Analisis data pengelolaan makanan melalui tahap reduksi data, memaparkan dan penarikan kesimpulan. Data tentang dampak pengelolaan makanan dilihat dari tingkat kecukupan konsumsi gizi disesuaikan dengan AKG riil.Pengelolaan makanan di Pesantren Progresif Bumi Shalawat dinilai cukup baik, dalam kegiatan menyusun anggaran dengan membagi angaran produksi dan non produksi, perencanaan menu, penyusunan standart bahan dan peralatan. Pengawasan dalam pengelolaan makanan dinilai kurang sesuai, karena hanya didasarkan pada unsur kepercayaan pada pengurus dapur. Kecukupan gizi santri berdasarkan tingkat konsumsi untuk kecukupan energi, lemak dan karbohidrat masuk kategori defisit, sedangkan untuk kecukupan protein baik. Simpulan penelitian adalah pengelolaan makanan untuk santri di pesantren perlu diperhatikan lebih seksama agar kebutuhan gizi santri terpenuhi dan pengelolaan makanan dapat dilaksanakan secara efektif dan efisien.

Abstract

This study aims to determine the food management in Islamic boarding school Progressive Bumi Shalawat, and to determine the fulfillment of nutrition students (energy, carbohydrate, protein and fat). Food management seen include planning, organizing, actuating and controlling, while the visible elements such as man,money,material,mechine,methods and markets.The research was conducted at the Islamic Boarding School Proresif Bumi Shalawat Sidoarjo in class collected students respondents totaled 42 children. This was qualitative descriptive research. Methods used interviews, observations, questionnaires and documentation. Analysis of the data food management through reduction , description and conclusions stage. Data on the impact of food management views of the adequacy of nutrient intake adjusted to the real RDA (Recommended Dietery Allowance)Food management in Islamic Boarding School Progressive Bumi Shalawat was considered fair, budgeting activities by dividing production and non-production budgets, planning menus, preparing materials and equipment standards. Oversight in the management of food considered less suitable, because it is based on an element of trust in the management of the kitchen. Nutrition students by level of consumption for energy sufficiency, fats and carbohydrates in the category of deficits,but protein in category of good. Conclusions of research is the food management to students in schools need to be considered more carefully so the nutritional needs of students and food management can be carried out effectively and efficiently.
